What is special about this bean?

This single origin bean undergoes a distinctive processing method, beginning with a 24-hour dry aerobic fermentation and followed by 50 hours of dry anaerobic fermentation in rum barrels during its natural processing stage. The beans are then carefully dried on raised beds until ideal moisture content is achieved. Next the beans are rested in rum barrels for 10-20 days. This intricate process results in a bean with intricate and delicate flavours.

This microlot is 100% Castillo. This variety was developed by Federacion Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaft rust.
