How the Coffee Beans are processed:
Meet the producer behind this delightful coffee, Benjamin Martinez Ruiz, owner of the 1-hectare El Porvenir Farm in San Pedro Necta, Huehuetenango. Meticulously harvested and processed, the coffee cherries are de-pulped on the same day, left to ferment in water for 36-48 hours, and washed three times to remove all mucilage. The green beans are then dried to perfection in a wooden dryer or “pariguela” for 3 days.

I used an Aeropress to make a coffee with this roast, and was able to extract some good flavours out of it. Considering that this is also a single origin, it is definitely very well priced as well. Would recommend.
The Columbia Rum Aged coffee is another single origin that I’d highly recommend if you’re after a more unique and distinct flavour.
