This Single Origin stands out for its unique processing method. In addition to traditional washing, the green beans undergo yeast fermentation with the strain Saccharomyces cerevisiae. This fermentation process brings out delightful tropical fruit flavours that make this coffee truly intriguing.
When we cupped it, we were captivated by its blend of sweetness, tangy acidity, and a subtle hint of saltiness. It is the perfect brew for a refreshing Spring-Summer vibe – fruity, bright, and like sunshine in a cup!

Coffee Unveiled: The Farm
[The Farm]
La Bastilla Estate, established in 2003, brought life back to two abandoned estates in the Jinotega/Matagalpa region. Over the years, they replanted a diverse range of coffee varietals and upgraded infrastructure, including roads, living quarters, and a mall. Certified by the Rainforest Alliance, they emphasize both environmental care and educational opportunities for local youth.
La Bastilla is one of the few specialty coffee estates in Nicaragua with a fully integrated supply chain- from planting to exporting. With a sophisticated wet and dry processing plant, they create around 350 micro-lots each season, ensuring that every coffee produces a unique brew.

Processing Method: Washed, Yeast Fermentation
- Fully Washed – Traditional processing. dried at 45 degrees C.
- Yeast Fermentation -Using specialty yeasts (Saccharomyces cerevisiae) made by Lallemand for fermentation in a controlled environment (bins) which give the coffee an additional layer of tropical fruit and floral aromas. These special, washed lots have tropical-fruit-like notes.
